South of the Border Stuffed Peppers

Combine leftovers from your Labor Day festivities for a quick meal with minimal Prep.
Ingredients:
4 large bell peppers, halved & seeded
2 cups cooked rice
1 can black beans (drained)
1 cup corn kernels
1 tsp South of the Border
1 cup shredded cheddar
Directions:
Mix rice, beans, corn, and seasoning.
Stuff peppers, top with cheese.
Bake at 375°F for 20 min.
