These sandwiches offer a savory, Italian-inspired flavor from the Mountain Top Garlic blend—perfect for a lighter but still satisfying game-day bite.
Ingredients (Serves 4–6):
4–6 boneless, skinless chicken thighs or breasts
2 tbsp olive oil
1 tbsp Mountain Top Garlic spice blend
4–6 sandwich buns (ciabatta, brioche, or hoagie rolls)
Optional toppings: fresh mozzarella, roasted red peppers, arugula, pesto mayo
Instructions:
Season the Chicken: Coat chicken in olive oil and rub thoroughly with Mountain Top Garlic. Let rest for 15–30 minutes.
Grill: Cook chicken over medium-high heat until cooked through (internal temp 165°F), about 5–6 minutes per side depending on thickness. Let rest, then slice or leave whole.
Assemble Sandwiches: Layer chicken on toasted buns with optional mozzarella, peppers, and a smear of pesto mayo. Wrap tightly in foil or serve warm.
