Halloween is the last Friday of October. For each Friday of October Bear Creek Rubs is featuring a recipe with a Halloween theme.
Witch’s Cauldron Roasted Pumpkin Soup
Ingredients:
4 cups cubed pumpkin or butternut squash
2 tbsp olive oil
1 tsp salt
1 tsp Bear Creek Rubs Flaming Embers Steak Seasoning
1 onion, chopped
3 cups vegetable broth
½ cup cream or coconut milk
Instructions:
Toss pumpkin cubes with olive oil and Flaming Embers seasoning. Roast at 400°F for 25 minutes.
In a pot, sauté onion until soft, then add roasted pumpkin and broth. Simmer 10 minutes.
Blend until smooth, stir in cream, and serve hot in small black cauldrons or bowls.
Tip: Garnish with a swirl of cream and a sprinkle of smoky seasoning on top for a dramatic finish.
