Featuring Smoking Blue Bonnet + South of the Border
Smoky Southwest Pasta Salad
A bold, satisfying cold pasta dish that holds up beautifully in a cooler or lunchbox.
Ingredients:
8 oz cooked pasta (rotini or penne)
1 cup black beans (rinsed)
1 cup corn (fresh, frozen, or canned)
1 cup cherry tomatoes (halved)
1/2 cup diced red onion
1/2 cup chopped cilantro
1/2 tsp Smoking Blue Bonnet
1/4 tsp South of the Border
Juice of 1 lime
1/4 cup olive oil
Salt to taste
Instructions:
Mix lime juice, olive oil, and Bear Creek spices in a small jar (shake to combine).
Toss with pasta and other ingredients.
Chill overnight. Serve cold with sliced avocado if desired.
