All week I've heard "what's you favorite Superbowl commercial, snack, player, team I'm not a football fan so none of these favorites mean anything to me. When I was asked what is my favorite; 'meatloaf' was my answer.
Meatloaf, mashed potatoes and gravy, corn I can't think of a more down home meal than that. There is usually leftover meatloaf which makes excellent sandwiches. My Mom had a very simple recipe.
1 pound hamburger
6 saltine crackers
1 egg
1 cup salsa ( Mom used Pace)
salt and pepper to taste ( this is where I made this recipe mine, I substitute All American rub for salt and pepper).
Ketchup
Mix everything together, place in baking dish, spread ketchup on top of meatloaf. Bake at 350 degrees until internal meatloaf temperature is 165 degrees.
This recipe is very simple but so tasty!!
