Smoking Blue Bonnet Breakfast Scramble or Burrito

Perfect for: camping breakfasts, brunches, or make-ahead freezer burritos
Ingredients (Serves 2–4):
6 large eggs
½ cup milk or half-and-half (optional for creaminess)
½ cup diced onion
½ cup diced bell pepper (red or green)
½ cup diced cooked potatoes or hash browns (optional)
½ cup shredded cheese (cheddar or pepper jack work well)
½ cup cooked bacon or sausage crumbles (optional)
1 tsp Smoking Blue Bonnet spice blend
2–4 flour tortillas (for burritos)
Butter or oil for the skillet
Instructions:
Prep Veggies: Sauté onions and bell peppers (and potatoes, if using) in a little oil over medium heat until soft, about 5–7 minutes.
Whisk Eggs: In a bowl, whisk together eggs, milk, and Smoking Blue Bonnet.
Cook Scramble: Pour egg mixture over the sautéed vegetables. Let set slightly, then gently stir until fully cooked but still soft.
Add Cheese & Protein: Stir in cheese and cooked bacon or sausage. Remove from heat.
For Burritos: Warm tortillas. Spoon scrambled mixture into center of each, roll tightly, and serve or wrap in foil for later.
Make-Ahead Tip:
Wrap burritos individually in foil and freeze. Reheat in oven at 350°F for 20 minutes or microwave (unwrapped) for 2–3 minutes.
