As we continue with Make Ahead Weekend meals we are featuring our Woodland Embers Smoked Salt.

These meals are designed for prep on Friday or Saturday, with flavors amplify as they rest.

 Woodland Embers Pulled Pork Sliders

Best Served: Reheated or room temp

Make-Ahead Time: 2 days ahead


Ingredients:

2 lb pork shoulder

1 tsp brown sugar

 1/4 tsp Woodland Embers Smoked Salt

1/2 tsp paprika

1/2 cup apple cider vinegar

Slider buns


Coleslaw (optional topping)

Instructions:

Rub pork with smoked salt, sugar, and paprika. Place in slow cooker with vinegar.

Cook on low for 8 hours. Shred and mix with juices.

Serve on slider buns with coleslaw.

2. Smoky Black Bean & Sweet Potato Wraps with Smoked Salt Yogurt Sauce

Best Served: Cold or lightly reheated

Make-Ahead Time: Same day or 1 day ahead

Ingredients:

2 medium sweet potatoes, cubed

1 tbsp olive oil

1/4 tsp Woodland Embers Smoked Salt

1 can black beans, drained

1/4 red cabbage, shredded

Whole wheat wraps or tortillas


Yogurt Sauce:

1/2 cup plain Greek yogurt

1 tsp lemon juice

1/4 tsp Woodland Embers Smoked Salt

1/4 tsp cumin

Instructions:

Roast sweet potatoes with oil and smoked salt at 425°F for 25 minutes.

Assemble wraps: sweet potato, black beans, cabbage, and a drizzle of yogurt sauce.

Wrap tightly and store in foil. Keeps 2 days in fridge.
